Preparation
Prepare the Beef
Take the meat out of the refrigerator a few minutes before cooking. Pat it dry carefully and then lightly pepper it.
Sear the Meat
Heat neutral oil in a pan over very high heat. Sear the piece of beef on all sides for about 30 to 45 seconds per side. The outside should be well colored while the inside remains rare to medium-rare.
Let it Cool
Immediately remove the meat from the pan and let it cool for a few minutes. Then place it in the refrigerator to make slicing easier.
Prepare the Accompaniment
Mix the Plantin truffle soy sauce with sesame oil. Finely slice the green onion.
Slice the Tataki
Using a sharp knife, cut the beef into thin, even slices.
Plate
Arrange the tataki slices harmoniously on a plate. Drizzle with truffle soy sauce, then add sesame seeds, green onion, and a few young shoots. Serve the remaining sauce on the side.
Plantin Chef’s tip(s)
To achieve a successful tataki, use a very hot pan to quickly sear the outside without cooking the heart of the meat. Add the Plantin truffle soy sauce at the time of plating, without heating it, to preserve its truffle aromas as much as possible.
