Preparation
Prepare the filling
Finely chop the spring onions and grate the carrot, garlic, and ginger. Mix everything with the minced chicken and sesame oil. Lightly season with pepper.
Shape the gyozas
Place a small amount of filling in the center of each dough wrapper. Lightly moisten the edges with water, fold the dough in half, and pinch the edges to seal the gyozas well.
Brown the gyozas
Heat neutral oil in a pan. Place the gyozas flat side down and let them brown for 2 to 3 minutes.
Finish cooking with steam
Add a small amount of water to the pan and cover immediately. Let cook for about 5 minutes, until the water has evaporated and the filling is well cooked.
Finalize cooking
Remove the lid and let the gyozas brown for a few more moments to achieve a crispy base.
Plate
Arrange the gyozas on a plate. Sprinkle with sesame seeds, spring onions, and a few young shoots. Serve with Plantin truffle soy sauce in a small bowl.
Plantin Chef’s tip(s)
To achieve gyozas that are both crispy and tender, always start by searing them in a hot pan before adding water and covering. Serve the Plantin truffle soy sauce on the side and do not heat it to fully preserve its truffle aromas.
